Copy Cat Recipe Using Food Strorage: Olive Garden Chicken Gnocchi Soup

Have you noticed that I love soup?  Well if not then I do.  When I make this or any other chicken based soup I like to make my own chicken stock, it is not hard and it is so delicious.  Give it a try.

Copy Cat Recipe: Chicken Gnocchi Soup

1 cup THRIVE freeze dried chicken
4 cups chicken stock (you can buy it, make it, or use bouillon)
2 cups half-and-half
½ cup THRIVE freeze dried celery
1 garlic cloves, chopped
½ THRIVE dehydrated carrots
1/2 cup THRIVE freeze dried onions
½ cup THRIVE freeze dried spinach
1 tablespoon olive oil
1 teaspoon thyme
salt and pepper
16 ounces potato gnocchi

In a large soup pot add, onion, celery, garlic, carrot,  chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, and then turn down to a simmer for 10 minutes.  Add spinach and cook for another 1-2 minutes until spinach is rehydrated.
Ladle into bowls and serve!
